Hunger/thirst/sleep mods add real-world considerations to gameplay, causing your character to have physiological needs. More Complex Needs sets itself apart from other needs mods by realistically simulating human physiology; foods are given accurate nutritional information, including calories, protein, nutrients, and hydration, and a player's needs reflect actual consumption rates as closely as possible. The most recent incarnation, released for Fallout 4 as part of the overhaul mod More Complex Wasteland, goes so far as to break calories down into their source macronutrients (fat, protein, carbohydrates, and alcohol), independently tracking muscle and liver glycogen levels and body fat. 
Although this level of realism is overkill for most players, the mod was highly popular among survivalists, and other people looking to add depth to games they may play for a thousand hours or more. I received messages from a number of people saying that they changed their actual eating habits because of what they learned from the mod.
The Fallout 3 version of Imp's More Complex Needs featured snarky reminders to keep an eye on your character's health.
Nutrition stats could be viewed via a menu accessible from the player's Pip-Boy wrist computer, and via a readout on the heads-up-display.
The mod is highly configurable. The above image shows a menu where consumption rates for a host of nutrients (some fictional) could be adjusted.
